San Gimignano

The present-day winery, which is entirely underground and whose colors are in perfect harmony with those of the surrounding Tuscan countryside, was built in 2011. It is here – using traditional techniques – that the grapes from the Estate’s own vineyards are vinified.

The vinification process for Vernaccia di San Gimignano, the wine that enchanted famous personalities such as Lorenzo de’ Medici and Ludovico Maria Sforza, follows the simple rules for obtaining fine white wines: harvesting by hand; transferring the grapes into the press by gravity, without the use of pumps; soft pressing; and constant control of the temperature during fermentation. Maturation of the Vernaccia takes place in stainless steel tanks, whereas for La Gentilesca it is also carried outpartlyin 225-liter oak barrels. Then, once it has been filtered, the wine is bottled, no earlier than seven months after the harvest.
